A lot of Christian coffee houses and churches have been successful with a Friday and or Saturday night café. They bring in local entertainment both Christian and secular. This can include local bands or local high school groups. Many center on open mike where people can sing songs, read poetry and the like. Some have a combination of these. You could also consider an improv night.
