Tried something new with tacos tonight. Used straight up tofu with some seasoning for the meat instead of processed fake meat. Made a vegan queso out of potato and carrots in place of cheddar cheese. Used extreme 30 calorie tortillas in place of the regular super high calorie ones. Overall, I was very pleasantly surprised! I think I need to figure out how to season the tofu a little better, but overall it tasted great and was way less calories/way more nutritious!
