The psalmist used hyperbole.

These were not absolute guarantees. The psalmist encouraged people to trust God using poetic exaggerations.

Satan tempted Jesus in Mat 4:

The devil deliberately omitted the infinitive phrase. Why?

The omission was a distraction. With or without the phrase, the passage was about trusting God. Jesus was not distracted. He did not argue with the devil about the omission. As usual, Satan tried to provoke people to sin: Test this: If you throw yourself down and the angels do not catch you, then you are not the Son of God.

7 Jesus said to him, “Again it is written, ‘You shall not put the Lord your God to the test.’”

Jesus was not distracted and was focused.

Why did the devil omit "to guard you in all your ways"?

He tried to distract Jesus' thinking with the omission. It didn't work. Jesus knew the difference between trusting God and testing Him.

Because "to guard you in all your ways" points directly at Satan's device -- his error was to try and get Christ to act in the way of Satan - not in the way of the Messiah - Son of God.

Because he did not want to remind Christ of the very point of error he was introducing which is that his suggestions were NOT the ways of God.

Satan's IQ/mind/Intellect is far above any human. Nothing he says or does "is for nothing"

He is tempting Jesus NOT to act in accordance to "His ways" but rather in accordance to "satan's ways".

So to remind Him that the text says "to keep you in all your ways" - is to remind Christ of the very device of deception Satan wishes to employ.

Reading Luke 4:10-11 satan does say in 10b to keep thee. So maybe because Matthew‘s Gospel is more about Jesus the King, so as the True King Jesus has no need to be kept.
But Luke’s Gospel is about Jesus the Man. All saints need great help to keep ourselves. So Luke states in so many words as men and women we also can have this help, but Matthew is like our Great Kings needs not be help or kept.
