If we evolved from apes, how come the rest of the apes didn't evolve with us?
Quickly stated, they have. The apes of today are likely no more similar to the common ancestor between apes and man than man is. Even had the common ancestor continued to survive as a species the fact that a portion of their population seperated and evolved into mankind in no way poses a problem. Suppose it turned out that you and some of your associates ran off to some desolate island somewhere and began reproducing for a few generations only to find that, after a while, for whatever genetic reason you all are now unable to reproduce with other people from outside your island bungalo. Hurray, you're a new species. Does this mean that everyone outside of the island can no longer exist or that they had to have changed as well because you changed?

Ok, so that wasn't quite so quick.

if you are serious about studying human evolution, the best book i am aware of on the topic is:

Where Do We Come From?: The Molecular Evidence for Human Descent by Jan Klein, Naoyuki Takahata

it is heads and shoulders above anything else i've found.
but i am always looking for recommendations on the topic.

Basically, other people have covered this. Why are there multiple breeds of dog, not just one breed? Because dogs under different selection pressures change in different ways. Some things stay fairly stable, if they've found a good niche; others change a lot.
