When people are talking extemporaneously it generally sounds quite natural. People will use fillers, stop a sentence half way through and start another. Repeat a point, pause for thought...it's all quite natural. But print out the transcript and quite often it looks at time somewhat odd. Because we are used to reading that which has been considered and edited and altered to make better sense. It's quite easy to determine if someone is reading a prepared speech or talking off the cuff. They are entirely different.
That said, put in a few paragraph breaks in Harris' transcription and it reads very well indeed.
