For PC, I'd have to say:

Fallout & Fallout 2
simply because there are so many different ways you can do things from smooth-talking to thieving to brute force.
Planescape: Torment for the same reason plus the depth of the world.

For XBox: KOTOR

Wow, another Morrowind fan. I haven't played it here of late, but I picked up the Game of the Year edition back in January of this year, and I've been extremely impressed at how detailed that game is and how open-ended it is.

Final Fantasy 8 was decent...

but probably the best RPG I've played has been Baldur's Gate II: Shadows of Amn and it's expansion pack, Throne of Bhaal.

There are a LOT of add on packs for it, it's an incredible game.

Fallout and Diablo get honorable mentions.

I have to say, even though I'm gonna get flamed...

The final fantasy series, and games like it aren't RPGs! Now don't get me wrong I enjoy the heck out of them, but there isn't any roleplaying to them. I think they could best be described as turn-based battle games with an intricate plot.

You're right. In PC gaming, those type games are classified as Adventure games. That was the biggest shocker to me when I got my Xbox (first console since NES) and got Shenmue 2 thinking it was an rpg when it was an adventure game.
