I worked with them for two summers, along with a host of other anabaptists (some Mennonites of varying orders, and some Brethren). My boss was an Amish woman, a great lady, very friendly and understanding.

My favorite co-worker was an older Amish gentleman whose name I will emit, what a great guy. I would give him rides home after work on occasion, since obviously he can't drive a car (he is Old Order), and we had some great conversations.

I'm almost the opposite: I ended up as Amish-Mennonite (or Beachy-Amish). If you want a glimpse of the Amish mind, why not subscribe to one of their snail-mail periodicals? It's not as personal, of course, but it will keep your culture-shock to a minimum.
