That's easy to answer.

If they get testy about it, just say "God wrote it" and see where they go with that.

1 Thessalonians 2:13 For this cause also thank we God without ceasing, because, when ye received the word of God which ye heard of us, ye received it not as the word of men, but as it is in truth, the word of God, which effectually worketh also in you that believe.

And if they want to argue that, make them admit (if you can) that they don't believe in verbal plenary inspiration.

Then shake off the dust of your feet and move on.

Should I tell them to "take a hike"?

Make them look disrespectful to their flag and/or country* first, then tell them their specific discipline can take a hike.

* Many flags have crosses on them, and many (most?) countries have national anthems that pay homage to God. O Canada, for example, has a prayer embedded in it.

...and of course, based on the language used, there are questions as to whether Paul wrote Colossians.

I understand it is still up for debate.

Considering the impossibility that Paul's snake bite story could
be true, I'd discount anything he claimed.

Some would have Paul lost at sea before he ever got on that island.

If anyone says Paul was "a bit new-agey," and you point out that Paul wrote Colossians to combat gnosticism, and they question whether Paul wrote Colossians or not, and you tell them then that God wrote it; don't just tell them to take a hike.

Get them to disrespect God and country first, then tell them.

It was only one example out of about a hundred.

Here, I'll use another one:

England's National Anthem: God Save the Queen

Here's Guam's regional anthem:

Stand ye Guamanians for your country
And sing her praise from shore to shore
For her honor, for her glory
Exalt our isle forever more.
For her honor, for her glory

Thankfully, my country's flag has no crosses and its national anthem doesn't reference any god. (At least not in the commonly sung verse.) A secular nation is the only way to go!

That horrible mechanistic gravity don't hold the sun together and
didn't ignore fusion there, still less can it be allowed to keep
the planets in orbit or control the tide.

It's like someone saying that the Mona Lisa is a great photo. Quite beautiful. Marvellous. Isn't God a great photographer. One snap and there it is! And you have to explain that it's not an instant snapshot. It's made up of thousand upon thousand of individual brushstrokes each perfectly placed to compliment the others. If you look close enough you can see how brilliantly it all fits together. You can see the mastery. The tones, the placement of each stroke, the selection of colours, the texture...

To some, it will always be just a pretty picture.

I don't need to be a botanist to enjoy the smell of a rose.

There are those who will just enjoy it without knowing why. And there are those who will endeavour to find out why it smells as good as it does and they will get an extra dimension to the pleasure it gives them.

I don't know if it is a valid hypothesis or not, but they point to some of Paul's writings. So maybe Paul himself was a bit "new-agey". :)
I think more mystically...there's the road to Damascus event that was a bit interesting.
