Whatever you drink, nurse it. If you can make it last until "next round" comes along, great. Let the bartender take it and bring you a fresh one. It keeps up the appearance of drinking a lot while actually only drinking a small portion of each drink. Wasteful? Yeah, but I think being sober is worth some waste.
Another thing you can do is try to discreetly get the bartender to bring you non-alcoholic drinks that look the part.
