What is the last stage of theosis, when it ends also what happens in the end and what are you after the process finish, like who are you?
Union with God is the third phase. It's also called "perfection" sometimes.

in a sense it never ends, as we can eternally become more like Christ

This is what I was thinking. It would be paradoxical for a person to proclaim they themselves have "made the grade" as thinking of that kind would be born of pride, and where there's pride there's a lack of humility. A person lacking in humility certainly hasn't achieved it.

This is unfathomable for me. I think words must fail, though, at this scale.

Would that be "we eternally become more like Christ" with the same meaning as "the Son is being eternally begotten of the Father"?

no, us becoming eternally like Christ is because of grace. the begottenness of the Son is something known internally to God alone.
