Avgolemono soup is not supposed to have shredded up chicken in it, is it? I thought it was a straight-up creamy soup like cream of tomato--broth, lemon, and egg with no chunks. I went to the new local greek place, and ordered it (despite being vegetarian, I wanted to try it so I can try making it at home with non-chicken broth) and it was FILLED with shredded chicken. Bleah.

Basically in all traditional greek kitchens the stock is made by boiling a chicken along with celery, carrots and other vegetables. The boiled chicken along with the veggies are eaten as a side together with the soup. So its customary to shred the chicken (actually its shredded by the diner picking at the boiled chicken not because the cook intentionally does it) and add it into the soup. In other words in the home the chicken is added afterwards usually by the diner himself. In many greek restaurants the chef simply adds shredded chicken whether you like it or not.
