Would sponsoring a child from Compassion for example, be considered tithing?

There is no tithe in the New Testament church. If you desire to give do so with all your heart as unto the Lord. Give cheerfully and hold back nothing that the Lord puts in your heart to do. Grace in the heart makes God's people gracious. Do not give out of compulsion or because your are bound to for the Lord will not bless it. Give what you want when you want and how much you want. Give sacrificially as to the Lord. The Lord needs nothing from man and if He is in whatever ministry He will see to its needs. He needs no help.

Which brings me to mention that all those so-called ministries that ask for your support in order to continue are not of the Lord. Radio preachers, churches and pastors or any other group which must beg has not the stamp of the Lord on them. If they did they would not need to beg.
