Because you can't claim ideological relations to another
Prophet without mentioning said Prophet. Why else would
there be such emphasis on the Divine Scriptures and the
other Messengers of God? If the Qur'an is the final message
from God to all of humanity, then it's a logical assumption there
were earlier messages. And Jesus' existence isn't nearly as much
of a sticking point as Jesus' divinity.
If the references to Maryam and her son were excluded, would the Qur'an be less valid?

You're promoting the Qur'an as the book with all the answers, when
it's still a matter of faith.
