Because he would not be compelled to use his baked goods to make a speech statement that he disagreed with. And a homosexual couple tried to use the court system to compel that. Thankfully, they lost.

This baker never persecuted anyone. They sought him ought specifically to persecute him. He just bakes cakes. He never went after anyone.

This is your own bigotry twisting the truth. He sells bakes goods to EVERYONE. He just won't sell a certain type of created good. He has no sign that says LGBTQ people can't come into his shop. It's only a specific creation he won't sell.

They are violating his religious rights. Their rights do not superscede his. His rights are not subservient.
