It's probably worth pointing out exactly the "science" that Professor Söderlund is involved in.
Biology? Environmental Science? Nutrition? Medicine?

No, he's the Professor of Marketing at the Stockholm School of Economics.

Frankly if academics were in charge, especially academics in this sort of field, I'd expect human civilization to break down to the point cannibalism is an option.
Trendy Asian-fusion cannibalism that is.

I don't really know what we have such a taboo about this or about lots of other meat sources (e.g. dog). It's not hard to imagine how the incentives would get messed up with eating humans, but assuming that you knew they weren't killed to be eaten....

If cannibalism is on the menu (pun intended) the phrase "finger lickin' good" takes on a new meaning
Also “having company over for dinner” just took a dark turn.

For the same reason we have a taboo about incest. It's bad for us. Consuming human flesh is a great way to pass around disease. Just ask the fore peoples of New Guinea.

or about lots of other meat sources (e.g. dog).

For two reasons. The first is that there is less biomass of carnivores because they eat herbivores. The second is, generally speaking, they taste disgusting.

https://www.truthorfiction.com/did-a-swedish-scientist-propose-cannibalism-to-fight-climate-change/

As for the context of Söderlund’s original remarks, the primary source appeared to be Sweden-based video content with only a brief, automatically translated summary. That auto-translation, which was clearly not exact, read:

In the days the “Gastro Summit — about the future of food” is being held at the Stockholm Fair. There, behavioral scientist Magnus Söderlund holds seminars that make most people raise their eyebrows. They are about the possibility of eating human flesh — to save the climate.
Even though , he was talking aboult eating people afrer they die. Would help. I have to say eat people, while they are alive would take care of over population. How ever true that is , I doubt I will be doing that.

Don’t eat the brain. The same risk exists with eating cows.

Dogs taste disgusting or carnivores? If we’re talking about carnivores, then I would argue that a bunch of larger fish and at least a handful of reptiles suggest otherwise. Frogs, too.

Alrighty mr infectious disease expert. It's just the brains, good to know.

Correct.

And what if we are talking about members of the order carnivora?

I couldn’t tell you. I know people eat dog and seal and I’m fairly certain some eat bear, but I’ve never had the pleasure.

over population is fake news

every year, humanity wastes 1.3 billion tons of food

enough to feed 13 billion more people

we can currently support 20 billion people if we play our cards right

We're already pressuring pretty much every single natural habitat on earth. Experience tells us humans are likely to manage additional population growth poorly rather than carefully.
