Oh, I was reading about those toll house cookies in the hmmm thread.
If you replace the butter and eggs with applesauce, the cookies will be delicious and suitable for Lenten times. However, it is advisable to reduce the sugar too (as applesauce is sweet naturally). I also add 1 tsp of baking soda and 1/2 tsp of baking powder (when using approximately 2 cups of wheat flour). The baking soda interacts with the applesauce to give the cookies a rise. So, you must add in the applesauce last, stir it in quickly, drop the dough on the cookie sheet, and then into the oven asap.
I usually set the oven at 325 F degrees when making this modification.
Cook it at a lower temperature. Do not make too many as they are soft (not hard), but they are delicious and good for those on diets too.
