Made a healthy version of Chinese stir-fry again today

My husband really likes this.


Ingredients
  • 1 lb boneless, skinless chicken breastcut into 1 inch cubes
  • salt and pepper to taste
  • 2 tbsp olive oil divided
  • 2 cups broccoli florets
  • 1/2 yellow bell pepper cut into 1 inch pieces
  • 1/2 red bell pepper cut into 1 inch pieces
  • 1/2 cup baby carrots sliced
  • 2 tsp minced ginger
  • 2 garlic cloves minced
  • Stir Fry Sauce
    • 1 tbsp corn starch
    • 2 tbsp cold water
    • 1/4 cup low sodium chicken broth
    • 3 tbsp low sodium soy sauce
    • 1/4 cup honey
    • 1 tbsp toasted sesame oil
    • 1/2 tsp crushed red pepper flakes

I also make a hot oil to drizzle over the dish along with chopped green onions. I put the stir/fry over brown rice or low carb thin brown pasta. You can use whatever combo of veggies you prefer. Great as a leftover. Tastes better. I double the sauce.

Yeah right.. after you rub it in even further with a picture. So much for my french toast afternoon snack idea. Stir fry here i come. My only alteration will be to throw the chicken breast frozen into the instant pot then shred it.

By the way, my hot garlic oil is about a cup of canola oil. 2 T crushed chili flakes or Chinese chili flakes. 4 or 5 cloves of garlic minced. Let it cook on the stove on medium low till aromatic and after it cools, transfer to glass bottle.

Does it mix well with sesame oil? Other wise garlic in everything but milk is fine with me.
If you do not mind the strongness of the sesame oil, it’s fine. Although I prefer the toasted sesame oil.

No sorry, I mean drizzling the garlic oil on the makings already flavoured with sesame. Do the two blend in your opinion?

Well not as well if it were blended together because it has a distinctly Asian flavor but I imagine you could do that in a pinch.
