I’ve read that Christians believe there is only two sexes.....male and female. What about intersexed individuals? More particularly, what does the Lutheran church teach on the subject?
How can there only be two sexes when some individuals are intersexed?

There are two sexes, but intersex is a form of disability. It's not a third sex, but a mix of the two or a disability. And like any other disability, illness, or disease, it's a result of the fall into sin.

Intersex people are rare, but they are not forgotten — Christ died for us all.

That makes sense, I think.
