Most Catholics don't use Latin in day to day conversation (or at all, sadly).

But the common Latin greeting would probably be "Salve!" (be well).

EDIT: Oh wait, did you mean in mass? I believe TadofLamb got that one.

In High School my Latin teacher had us use Latin greetings in class. We were given Salve, Ave, and Pax tecum as options. These were pronounced Salwe and Awe in class since we were learning classical pronunciation.

me and a friend in university used Salve and Ave as greetings
salve more offten then ave
he is not catholic though, he was not even christian
