Well, you certainly are including fish and olive oil which is great. While you may very well feel fine, you might even feel better without grains!
I have a hard time believing Dallas is the only one around not affected by grains. Gas and bloating is nearly inevitable with grains. And both are indicative of gut stress.

Giving up grains can only help health. I just see more problems associated with it.
