I think those would be regarded as either inverted power chords or root-fourth.

I tried the 2 note (5,8) version of SOTW and it never sounded right either. The only way it sounds right (at least to my ear) is the 1,5,8 version.

Well, Steve Morse thinks that they should be played as fourths (i.e. two notes).

When in doubt just hit the base note. (on the E string of an acoustic) it sounded OK to us then.
