• The General Mental Health Forum is now a Read Only Forum. As we had two large areas making it difficult for many to find, we decided to combine the Mental Health & the Recovery sections of the forum into Mental Health & Recovery as a whole. Physical Health still remains as it's own area within the entire Recovery area.

I just cant get it together in the mornings sometimes, so I got a microwave dish and I microwave some eggs and throw on some salsa.

I found out that certain kinds of cheese, like Provolone slices, but not all kinds - do make a good microwaved cheese sandwich when combined with two slices of bread.

Some cheeses, however, get too watery when microwaved.

I try to keep lots of fruit on hand. An easy breakfast for me if I want to put in zero effort is some combination of microwaveable oatmeal, fruit, and yogurt. I also like eggs in any form. Salad fixings like lettuce, spinach, and cherry tomatoes - things that don't need much prep - make for an easy dinner, and it can be spruced up with some chicken or hard-boiled eggs for protein. Pasta is another go-to dinner item for me because it's easy and delicious. Hummus is good for a healthy snack.

To avoid "wheat-belly" gluten-free pasta tastes good too.

I cook 7 at a time in a small pan of water.
Then shell them and store them in vinegar.
They'll keep virtually forever (in human terms, not biblical)
and taste a little like pickles. But are always ready to eat.

White rice with butter. Sounds ridiculously simple but if you get the kind that can be put in a bowl with water and microwaved then it's easy and quick. Stir in some butter for flavor. It's easy on your stomach if you have stomach issues when sad like I do.

i tired some microwave rice, flavored from India and it was fast and easy with low sodium

today, also made some hard boiled eggs and its super awesome to have these around for an easy meal--and the bonus is that its very nutritious as well!

Fish pasta dish

1 250 gram can of tuna
1 cup of peas
2-4 teaspoons of hot curry powder
1 onion
1 cup baby peas
3 tablespoons of cream
1 cup of milk
250 gram of egg noodles
3-4 teaspoons maggi seasoning or 1/2-3/4 teaspoon of veggie stock
optional
1 1/2 - 2 cups of grated cheese
salt

fry onions on hot 5 minutes
add curry
add peas
add tuna
boil pasta (10-12 minutes)
add (drained) pasta
add cream
1 cup of milk
2 tablespoons of (spelt) flour or corn starch
stir and bring back to boil for a few minutes


optional put in oven proof dish
put cheese on top
put oven on 230 Celsius
and bake for 25 minutes

total preparation time 20-40 minutes
serves 3-4 people and leftovers can be frozen.
