Do you think if Adam and eve never sinned, there would be domestication and domestic animals?
There wasn't, and wouldn't be, no.

None of the animals were threatening in any way, for quite some time..... (after they were kicked out of the garden).

How are you defining "domesticated?

The act of "naming" is consistently shown in scripture as the prerogative of a sovereign. Accepting the name is the acknowledgement of that sovereignty.

Prior to the fall, all the animals responded to Adam's call...so none of them was actually "wild."

There were no 'domesticated' cats (or dogs for that matter) for thousands of years ,
and what wildcats look like is still the same as always.
Note they were not "wild" for some time in or out of the garden.

Since we don't believe in evolution, is it incorrect to say lions and cheetahs are cats?

Christians dont believe in evolution-people say they are cats because they are related by a common ancestor.
It has nothing to do with ancestor.

Cats have been cats ever since creation,
and ever since Adam named them.

What does this have to do with the question in the op ?

Maybe. I don't see any reason why Adam might not have done some creative breeding.

It appears that dogs domesticated themselves anyway.

Do you think proto dogs looked like wolves?

When Russians domesticated foxes they developed babylike features.

What caused domestic cats to develop the different features they have?

I believe you mean "Who", not what.
At least we know Who made all things as they are.

Why are some people blonde , some brunette/brown hair, some raven black, some grey ?
Why do some people have pronounced noses, large ears, widely spaced eyes, long or short legs ?
How come some people have ability to do carpentry, come metal work, some with fabrics, and others with soil (farming/ gardening) ?

YHWH made everything perfectly, just as He says in His Word. (and simply).

Men/mankind/ messed up. (departing from Him; sinning and rebelling against Him)
