This is in order that the sons of Israel may bring their sacrifices which they have been sacrificing on the surface of the field that they bring them before Yahweh, to the priest at the opening of the tent of appointment, and sacrifice them as sacrifices of peace offerings to Yahweh.

Then the priest will sprinkle the blood against the altar of Yahweh at the opening of the tent of appointment, and he will cause the fat to fume as a fragrant odor to Yahweh.

Not longer shall they sacrifice their sacrifices to hairy goat-demons after whom they have been prostituting. An eonian statute shall this become for them throughout their generations.

To them you shall say: Any man from the house of Israel or from the sojourner who sojourns in your midst who should offer an ascent offering or a sacrifice

Under the New Covenant, all the old laws have been replaced with forgiveness.

Shalom David. Always a pleasure; even when we disagree. Call no man Rabbi; but each of us in the body, have our own gifts; and we have different perspectives in our discernment. I believe that we are called to share these gifts with the rest of the body.

Toward the end of what I posted of this passage, it does mention hairy goat demon sacrifices. That might be the reason; but I'm fairly sure that it is at least part of the reason. Mo Matter the reason, in the beginning of what I posted, we seem to have a clear, and absolute, command.

Then an address is further given to all of yisryl(the house of israel)

Every offering of food as a sacrifice with thankfulness for Who has given such a provision of sustenance is received.
Hence the fat burning with a "sweet-pleasing aroma having precedence.
Typically fat relates to oxen.
Sheep are known to be a lean meat.
Goats being even more so lean a meat are valued for their milk, hair, and other aspects.
The focus of instruction given in Vayikra(leviticus) is self discipline..
At least that is what I see with 7 bulls.

Oxen are far larger than sheep and goats. So the amount of fat is by volume a larger amount than what sheep and goats store.
Also there is a distinction in where each stores fat.
Sheep and goats will typically have lean muscles.

89 verses worth of data and number crunching if that is something you would like to explore.
But first you will need to accept that the number of oxen sacrificed far outnumber sheep and goats.
Which is a part of self discipline far as I can see.

For example, there is a numerical dimension of instruction that will confuse the enemy while they seek a mistake.
The altar for instance when viewed with a Vail reveals the heart of those who accuse such instruction to be in error according to mathematical measurements in geometry.
