In no particular order and definitely NOT limited to this brief brainstorm:
Most books by Watchman Nee including The Normal Christian Life, The Life That Wins, The Spiritual Man, and several others.I'm having a discussion with another poster @Devin Hammond that I thought deserved its own thread. I know there are many people who do not believe in anything but scripture for learning about God so this thread might not be for you.
Here are my top 10 off the top of my head that greatly impacted my life
1) The Pursuit of God by AW Tozer
2) The Knowledge of the Holy by AW Tozer
3) Knowing God by Packer
4) The Cost of Discipleship by Bonhoeffer
5) How to read the Bible for all its worth by Fee and Stuart
6) The Gospel according to Jesus by MacArthur
7) Pilgrims Progress by Bunyan
8) Fox's Book of Martyrs by Fox
9) Kingdom of the Cults by Martin
10) Evidence that demands a verdict by McDowell
What are your favorites ?

Good choices I have them both and hard to leave off the list along with Strobels on the case for series on Christ, Resurrection and Creator.I’d also recommend The Genesis Flood by Whitcomb and Morris, if still in print. It’s a thousand pages if memory serves, and Mere Christianity by CS Lewis.
CS Lewis, Til We Have Facesm, Space Trilogy (Starting with Out of the Silent Planet), Narnia Series (Starting with Lion, Witch and the Wardrobe), Mere Christianity, A Grief Observed, Problem of Pain, many many others.I'm having a discussion with another poster @Devin Hammond that I thought deserved its own thread. There are so many, including many that others have already mentioned.
These had the biggest impact during various stages of my Christian walk.

I have several books by Kostenberger, a great scholar !A random sampling, since this is a very big topic:
- On The Incarnation and That Christ Is One by HH St. Athanasius
- The Sayings of the Desert Fathers (any given collection; I have the Benedicta Ward translation)
- The works of St. Gregory Thaumaturgus, particularly his sermons on the baptism of Christ
- A Spiritual Psalter of St. Ephrem (I don't remember who translated/published this off hand; it's in English, but I vaguely remember it being related to the Russian Orthodox)
- Selected Discourses of Shenoute the Great (St. Shenouda the Archimandrite), tr. Brakke & Crislip
- Christology and the Council of Chalcedon by Fr. Shenouda Maher Ishak
- Taught by God: Making Sense of the Difficult Sayings of Jesus by Daniel Fanous
- The Holy Workshop of Virtue: The Life of St. John the Little by Zacharias of Sakha (tr. Tim Vivian)
- Words for our Time: The Spiritual Words of Matthew the Poor (tr. James Helmy)
- The Heresy of Orthodoxy: How Contemporary Culture's Fascination with Diversity Has Reshaped Our Understanding of Early Christianity by Andreas J. Kostenberger and Michael J. Kruger (This is essentially a book-length refutation of the Bauer hypothesis from the 1930s, which modern scholars like Bret Ehrman and others have made a living off of re-presenting as though it is cutting edge scholarship; yawwwwn)
