Are the terms "conservative Christian" or "conservative Protestant" unproblematic?

You're a mainline Protestant. Contrary to the perception, there are many theological conservatives or moderates in the mainline. My pastor is one such person.

From what you've said you have a quite unusually "conservative" ELCA. In this region it seems that lots of people are very "liberal" and I use those terms as they denote both political and theological stances. This is the area that Sponge came out of. The LCMS here is definitely moderate here.

I think I'm starting to understand it more. I simply am in an aging congregation, and being in the South, that also comes with some unique features.
