The New Covenant includes Gentiles because the blessing of Messiah by means of Israel(Mosaic covenant being fulfilled) extends to the Gentiles. Also the New Covenant is a NEW covenant.

I'm referring to the Mosaic convenant which pertains to Israel. The New Covenant pertains to human kind.

There are different covenants though. The Mosaic covenant pertains to the children of Israel which is physical blessings.

Interesting the texts only refer to Israel. The mystery was that the Holy Spirit can fall upon Gentiles, making one new man. However the one new man still has distinctions. The one new man as you stated with your scriptures is the message of Messiah.

Well Messianic Judaism primary purpose is for Jewish believers. As we know there have been issues and debates in relation to Gentiles and how they fit in Messianic Judaism. With this there have been splits and such from Messianic Judaism such as Messianic-ism, Hebrew roots etc.

You have to look at Paul as the Apostle to the Gentiles. A lot of what Paul says doesn't apply to Jews except Romans.

That's besides the point. The point is Jews are born into the covenant. From a 1st century perspective it wasn't whether or not Jews should observe, it was whether or not if Gentiles needed to part of the covenant people's to receive and benefit from the testimony of Jesus. Cornelius wasn't...
