LOVE the crockpot!

I made dinner for 6 on Saturday night with little effort.  Here's how:

Mediterranian Chicken

In the morning I sauteed put about 2.5 lbs of chicken thigh meat in a sautee pan with olive oil.  I added 2 cloves of garlic and 2 chopped shallots.  I then put the chicken in the crockpot with 1 cup white wine (if you don't do alchohol I'm sure cooking wine would be fine), salt and pepper.  Left it on low.

At about 3:00 I added in 1/2 a jar sundried tomatoes, 20 pitted kalmata olives, a cup of chicken broth and an entire lemon sliced very thin.

voila! Dinner at 6:00 for 6 people.  I made jasmine rice, asparagus, and salad to compliment the meal.  It was a big hit.

Any other good crockpot recipies out there?

That sounds awesome! :yum:
Yesterday was a kid's birthday from my church. His mom made the birthday cake in the crockpot, and she called it "Triple Chocolate Mess."
I don't know the exact recipe, but it was delicious, although maybe a little too sweet. She included chocolate cake mix, chocolate pudding, and chocolate chips!

I make spaghetti sauce. I like it so much better than the jar stuff and takes anly a few minutes.

1 big can crushed tomatoes
1 small can tomato paste
2 cloves garlic
1/2 tsp oregano
1 tsp basil, 2 tsp beef bouillon crystals, 2 T sugar, 1 tsp salt, 1/4 tsp pepper, 1 bay leaf, 1 sm can mushrooms, cooked ground meat of your choice in amount of your choice (I love it with ground turkey).

Simmer on low for several hours.

Well I am new to living alone so I decided to try my hand at the crockpot the other night, 2 pork tenderloins and a can of clam chowder on low for 8 hours, I think that was to long the chowder formed a nice golder brown layer over the top but the pork was unreal i had to take it out with a spatual because it kept falling apart just how I liked mmmmmmmm.. Anything that you all can suggest i have chicken breast in the freezer and a two steaks as well,my mom sad the steak might be tough, we will see.

Sweet baby rays rocks...... I live in Ma do you guys live around here too or is this stuff famous all over now?

A good recipe for chicken in the slow cooker is:

place chicken brst in btm of crock and cover w/ oj cook on low for 4 hours ... add bbq sauce and cook on low until you cannot pick the chick up w/ a fork....... take 2 forks and just hack all the meat apart (shred) ....... some mean sandwiches there!

Have you guys ever taken a pork butt roast and cooked in the crock pot all day with some BBQ sauce? It is so go, especially on a potato bun with some slaw on the side. It shredds up so good and makes the best bbq pork sand ever, well next to an outdoor smoker, now that's good!! HMMM :yum:
