Tonight my wife made fried catfish and coconut shrimp with plantains and french fries. It was delightful! Blessed to have a wife who cooks so well...
Dang, you're lucky to find plantains.

We had a busy day and had lunch at a nice restaurant. She had Chicken Fried Steak, mashed potatoes and glazed carrots. I had a very nice Reuben sandwich and fries. We concluded our errands and came home. Saturday is our TV night. This is the night dedicated to the things we watch together, Stranger Things, Yellowstone and Justified. We watch one episode of each every Saturday.

At the break point I made fried egg, ham and cheese sandwiched for a lighter dinner.

I love a good Rueben. We have some good Jewish delis up in the north east.

You sort of have to pick your punches with an air fryer.

A couple months ago I went all Dr. Frankenstein with the air fryer and made some sort of unholy abomination that involved Checkers frozen french fries, shredded cheese and bacon... it was delicious but my doctor was probably loading a shotgun for a mercy killing.

Obviously my wife was away with the kids or she might've strangled me with her tiny hands.

I usually do bone in skin on chicken thighs . I dust with a little onion powder and garlic powder and a little thyme then drizzle with avocado oil. These come out crispy and juicy.

In the air fryer? How long do you time it? That sounds like perfection, I'm definitely going to try it.

I just put a couple of potatoes in the oven to bake. I have some really nice pork loin chops going on the grill in about half an hour. It is just me and The Incomparable Sunflower her for dinner tonight. Our adult daughters have a regular group of friends that hang out every Sunday evening.

Gave chicken thighs in the air fryer a shot, but I don't think I seasoned them liberally enough. Next time I think I'll brine them in something. Maybe pickle juice?


I always use onion and garlic powder as well as thyme and make sure you drizzle or rub some type of oil such as avocado. I also use low salt soy sauce. I marinate for like 5 hours.
