At this rate, our vaccines will only help this unstoppable virus evolve into something that can infect any animal, and it will be so lethal, that nothing can survive against it.

Similarly, a study out of Pennsylvania State University found more than 80 percent of the white-tailed deer sampled in different parts of Iowa between December 2020 and January 2021 tested positive for SARS-CoV-2.

That's what Geert Vanden Bossche and others have been warning about all along if you mass-vaccinate in the middle of a pandemic with a leaky vaccine. While the predictions from the pro-vax side continue to fail (2 weeks to flatten the curve, herd immunity with % vaxed, no viral transmission from the vaxed, prevents death & hospitization, etc...), the predictions of the censored scientific community seem to be holding.
There are still too many unvaccinated people to blame new variants on a leaky virus.

If I'm not mistaken, both Delta and Nu arose in South Africa, where vaccination rates are as low as 35% in some areas ...

He doesn't blame the vaccine for the existence of variants. Variants already exist out there (I think there's something like 12000 known variants already). But vaccine-induced antibodies out-compete natural antibodies, while not neutralizing the variants. This allows them to thrive and spread.

I'd feel better if it could be contact traced that the Nu variant didn’t evolve after infecting vaccinated people, just to make sure science isn't aiding in this process, by forcing mutations into a certain (more deadly) direction.

That's simply not true.

Antibodies are individual. I have mine ... you have yours. Our antibodies don't compete.

And if you had COVID, as I did, and subsequently got the vaccine, as I did, your protection is boosted ... because now you have (2) sets of antibodies. The only job of the antibodies ... is to destroy a particular virus in your body. The more antibodies, ... the better ...

I think you misunderstood the point. Antibodies attach to receptor sites on the virus S protein. Your vaccine-induced antibodies are very specific for the configuration of the alpha and can bind and neutralize it. But if another variant comes along with a different configuration, your antibody will bind, but not neutralize, because of the mutations. But because it binds, it prevents your natural antibodies from binding and neutralizing. And it will always bind faster than your natural antibodies ("out-compete"), thus blocking them from helping neutralize.

Maybe their vaccines are inferior. Causing too many breakthrough cases/transmissions, thus resulting in a 'leaky vaccine'.

Actually, due to a prominence of AIDS in Africa, a good majority there are immunocompromised.

I've never heard of this scenario before ... and I follow vaccine methodology pretty closely.

If this proposition is at all true, then doubly immunized people would be at a disadvantage ... and the data does not support that ...

We've never mass-vaccinated during a pandemic before. But if you're interested, you can follow the argument here:
Geert Vanden Bossche - Voice for Science & Solidarity

Also, since you like to follow this sort of thing, you might be interested in his FAQ site:

Vaccine doesnt stop you getting covid
Vaccine doesnt stop you passing on covid
Vaccine doesnt stop you from dying from covid

Efficacy in people aged 16 and above was calculated in over 36,000 participants (including people over 75 years of age) who had no sign of previous infection. The study showed a 95% reduction in the number of symptomatic COVID-19 cases in the people who received the vaccine (8 cases out of 18,198 got COVID-19 symptoms) compared with people who received a dummy injection (162 cases out of 18,325 got COVID-19 symptoms). This means that the vaccine demonstrated a 95% efficacy in the trial.

The trial in people aged 16 years and older also showed around 95% efficacy in the participants at risk of severe COVID-19, including those with asthma, chronic lung disease, diabetes, high blood pressure or obesity.

Stuff like me makes me wonder, are we still using the same vaccines from January, or has anyone bothered to make new vaccines based upon the new variants, they keep saying, "Vaccines are 70% effective against delta and such." well maybe it's time to add more variants to the vaccines, but I've heard nothing about wether they are or not.
