The civets pass the coffee beans whole. No poop is used in making coffee.
Once locals discovered that westerners were willing to pay top dollar for civet processed coffee beans, they began trapping them and keeping them in cages so they could feed them coffee beans and collect the pooped beans without having to search the jungle for civet scat.
One reason the coffee beans were prized is because the civets supposedly only ate the best beans. Now you get whatever was fed to them. Capitalism at work
