In decades past my parents actually did that kind of thing. We had a neighbor across the road from some ranch property we owned and he raised cattle and our family would buy one cow from him a year that supplied us with probably 90% of our beef. And yes it was cheaper and better quality, especially if you want less fat and other kinds of tailored things.

We eat kosher and the last kosher butcher retired. Still we got some left over meat from Passover and eat mostly vegetarian anyway. Its cheaper. Still, if you can buy local beef or chicken, do it, both . Farmers loose often money with the middle man so in the end you both will benefit buying local.

Interesting enough, it was a Messianic rabbi friend that originally posted that meme that I copied over from Facebook.

I personally have never been that worried about any meat shortage, but for those of you who do, maybe you could try stretching out your meat over time, at least until the shortage is not a concern. Maybe try beating your meat out a bit to extend the surface area before you prepare and serve it; it might make it look bigger than it really is. Perception can play a big role in enjoyment, after all. Make up for less protein by adding your proteins somewhere else in the meal, such as in milk or peas.

We purchase our meat in bulk from a local farmer and smaller items at the farmers market. I found a sustainable source for fish I’ll use when we need to restock.

I prefer buying direct. The quality is better and I can customize the cuts. It’s more expensive upfront. But you save money in the long run.
