Why do many Christians eat pork when God says it's unclean?

Any persuasion for Christians to adhere to Levitical dietary laws given to Jews under the old covenant is coming from demons. Just because it is in the Bible, that doesn't mean it is for Christians to keep. Demons can use the Scriptures too, and people deceived by them use the Bible to teach all manner of heresy and nonsense.
That is one attitude, but prayer and asking God if it is His Will, His Way, His Truth might bring light to the matter? I think caution before demonization is a wise approach.

You do realize that these laws were given to the whole house of Israel and not just Judah at that time? Just wanted to clarify that point. Even Moses himself wasn't Jewish.

I didn't say or mean to imply that every Christian who thinks pork is unclean is being deceived by a demon. Some may be former Jews or Muslims, for example, who still have a difficult time eating pork with a clear conscience toward God because of their former religions, or eating meat in general in the case of former SDAs and such. And I'm sure there are Christians who believe in keeping aspects of Jewish ceremonial law because they simply are confused about what doctrine applies to them under the New Covenant and what doesn't. But there are demons who deceive Christians into keeping the law of Moses and into adopting other unorthodox practices also.

No, it's not absurd in fact. Demons can use the Bible to deceive people and lead them away from God just as they can and do use other books. You don't have to believe this or agree with me, but I've said all I have to say about the subject. May God show you the truth about it.

The dietary laws were there to simply segregate the jews from the gentiles. That's why jews could sell unclean meat to gentiles. Chickens are way more filthy than pigs and more likely to get you sick if not prepared correctly.
Christians are called to live a set-apart(holy life), just like the Israelites were.

I think the book of Acts addresses this. I think the Apostle Paul addressed this. Paul pretty much rebuked people like you and warned Christians from people like you.
