Isn't this what they are really saying: If you take a cruise with us there is a good chance you're going to catch Covid-19 while on our boat. If you're over 70 and catch it on our boat, there is an increased chance you're going to die. We prefer not to have your death on our hands, nor do we care to have your family sue us.

Royal Caribbean is doing it too ( among with not sailing from US ports for 30 days starting last night at midnight. They are also not allowing people to travel who have long-term serious health conditions. I feel these steps are reasonable until they get this virus under control for the safety and health of guests.

This isn't the time for anybody to be taking a cruise. Do you really want to be potentially stuck at sea under quarantine?

I expect this rule will disappear with time, if any cruise ship company wants to stay in business. The 70+ers are an increasing population group, with money they want to spend.
The 70+ers are already the most susceptible to influensa, and a good many other diseases/disorders.
Soon ever passenger will have to sign a form guaranteeing that they will remain alive for the duration of the voyage!

On the other hand...
Perhaps the cruise industry will die! What a benefit that would be for the environment! and for ports of call that are now totally clogged up by the hundreds of buses taking cruise ship passengers on city-tours. There are a lot of cities now putting curbs on these tsunamies of people (many who refuse to walk anywhere and often pay virtually nothing to the local economy compared to their impact), because city residents are fed up with excessive tourism.
