Let me throw in my 2¢ again. The Greek word for "Friday," then and now, is παρασκευη/paraskeue which means "preparation."
All 4 gospels agree that Jesus was crucified on parasceue i.e. Friday.

Matthew 27:61-62
(61) And there was Mary Magdalene, and the other Mary, sitting over against the sepulchre.
(62) Now the next day, that followed the day of the preparation, the chief priests and Pharisees came together unto Pilate,
Mark 15:42-43
(42) And now when the even was come, because it was the preparation, that is, the day before the sabbath,
(43) Joseph of Arimathaea, an honourable counsellor, which also waited for the kingdom of God, came, and went in boldly unto Pilate, and craved the body of Jesus.
Luke 23:53-54
(53) And he took it down, and wrapped it in linen, and laid it in a sepulchre that was hewn in stone, wherein never man before was laid.
(54) And that day was the preparation, and the sabbath drew on.
John 19:14-15
(14) And it was the preparation of the passover, and about the sixth hour: and he saith unto the Jews, Behold your King!
(15) But they cried out, Away with him, away with him, crucify him. Pilate saith unto them, Shall I crucify your King? The chief priests answered, We have no king but Caesar.
As I said previously there was only one preparation in passion week. The preparation and cooking of food was specifically permitted on the 1st day of unleavened bread thus there was no need to prepare the day before as with the Sabbath. Exodus 12:15-16

Right. You don't have to persuade me that the Last Supper was not a Seder, because I am 75% sure that it wasn't, due to evidence like yours. My main problem is dealing with Mark 14:12 and Luke 22:7. There have been different theories that I found, but none of them looked great to me.

First, Mark 14 begins by describing the priests' conspiracy, saying:

This sounds like either (A) two days after the events in Chapter 13 when Jesus gave his teaching on the Mount of Olivesh, the priests conspired, or (B) an awkward way of saying that two days in the future from the day when the priests had their discussion, the Feast of Unleavened Bread would happen.

Then Mark 14 says:
You can read "on the first day" grammatically in Greek as either that the disciples asked him the question at the time of the first day, ie. when the first day came, or "about" the first day. This is because the Greek term for "on the" (τῇ) can mean either.
In Matthew 6:25, it is part of the phrase "do not be worried about (τῇ) your life". But it usually seems to mean the way that it sounds in English, like in Matthew 13:1:

Next, it says:
The plain meaning is that they prepared "the" Passover, which they had been discussing with Christ, but theoretically it could mean a special Passover meal or Jesus' spiritual Passover.

Like I mentioned, there are different explanations for the verses. I gave one for each verse above, but they don't look real convincing.
I understand your dilemma, and that's why having to have 'rock solid conclusive evidence' doesn't really even seem to be a possibility. Which is another reason I said this whole thing is certainly a non essential for walking the walk IMO.

I might just end by saying, the apostles obviously knew nothing about the NT significance of the spiritual fulfillment of the OT Passover and how 'it' would be celebrated until after the last supper. PLUS...what they wrote in a gospel may have even suffered from the 'interpretation of indoctrinated views, held by later 'biblical scribes'. NT scribes convinced the bible was inerrant so anything that was in disagreement with current theology got tweaked because they assumed prior errors by those less 'educated' than they. And scriptures warns of such individuals concerning more weighty matters IMO.

JER 8:8 "How can you say, 'We are wise, and the law of the LORD is with us'? But, behold, the false pen of the scribes has made it into a lie.

My 'opinion' and the verse above, is also why I have my ~St Jerome signature line~ below.

If I am not mistaken they had a provision for those who would not be there for Nisan 14 to observe the Passover on the 13th.

From the Jewish Encyclopedia
According to Num. ix. 6, Levitical purity was another prerequisite. To enable such as happened to be in an unclean state through contact with the dead, or were away from home at the appointed season, to "offer the oblation of Yhwh," a second Passover was instituted on the fourteenth day of the second month (Num. ix. 9 et seq.)

OK, so under this theory, Jesus was celebrating the Passover on Nisan 14 because by being in Jerusalem, he was away from home at the appointed season? So the pilgrims who were in Jerusalem would have celebrated the festival on 14 Nisan?

Numbers 9 includes:
10 Speak unto the children of Israel, saying, If any man of you or of your posterity shall be unclean by reason of a dead body, or be in a journey afar off, yet he shall keep the passover unto the Lord.

11 The fourteenth day of the second month at even they shall keep it, and eat it with unleavened bread and bitter herbs.
Also, this refers to the second month, but that was not Nisan, because the Hebrew calendar begins in the Fall, correct?

Passover is in March/April coincides more or less with our Easter. Actually Jesus went to Jerusalem to specifically celebrate the Passover when He could have gone to Nazareth.

Let me get this straight. Numbers 9 says that travelers who can't make it on 15 Nisan can instead have Passover on the 14th of the "second month". But the second month is not Nisan AFAIK, so this does not solve the problem in Mark 14:12 where Jesus' apostles prepare for the Passover during the daytime when the lambs were killed (14 Nisan, apparently) and before the Last Supper.

I should added the following. The Lord spoke of how He eagerly desired to eat THIS and then went on to tell us why because He would eat it again in Heaven. What did He mean by this, The Passover eaten in heaven will be the fulfillment of the Passover. Was it not fulfilled at His death on Passover. Sounds like it wasn't but it will be and it is beautiful when we know there is only one meal spoken of being eaten in heaven, The Wedding Supper of The Lamb when we, His Bride, will finally be able to quit fasting as we now do. The Lord said while the Bridegroom was with the bride they could not fast when they wanted to know why they did not observe the fasts. Then the Lord said but the time is coming when we will indeed the time was coming when the Bride would fast. That night on the 3rd Cup, the Cup of Redemption Ne brought the Lord's Supper. Now something Jewish weddings when the groom promised all he would do for her if the Bride accepted she drank from the cup and of course ate the Matzo. Bread. We do this now in churches with varying degrees of observing it. But when we do it is still the Bride signaling her acceptance and her belief He will return for her to take her to His Father's house. That nighty in a room with the world around them getting ready to kill Him He proposed and she accepted.

When I quoted the Jewish Encyclopedia I was replying to someone's comment about the alternate day for Passover.
Jewish Encyclopedia-Passover
Only those who were circumcised and clean before the Law might participate; and they were forbidden to have leavened food in their possession during the act of killing the paschal lamb. The animal was slain on the eve of the Passover, on the afternoon of the 14th of Nisan, after the Tamid sacrifice had been killed, i.e., at three o'clock, or, in case the eve of the Passover fell on Friday, at two.
PASSOVER SACRIFICE - JewishEncyclopedia.com
Jesus' last meal would have been after sundown on Thursday night which according to the Jewish calendar was Nisan 14. The official Passover time would have been after sundown Friday on Nisan 15.
During passion week Passover fell on the Sabbath that is why it was a High Sabbath
