The Vatican did not remove any books from the Bible. They are all still there in any Catholic Bible.

Because Protestants are often anti-Catholic and most of the Christian bookstores are Protestant. The bookstores that aren't anti-Catholic just aren't interested in Catholic stuff -- including Catholic Bibles. There are a few Catholic bookstores here and there and they have Catholic kind of stuff -- including Catholic Bibles with the additional Old Testament books and sections of Old Testament books.

Where I'm from originally there were just as many Catholic bookstores as Protestant. Where live now, there are two Catholic bookstores, and the one Protestant bookstore (Lifeway) just closed down recently.
