Whatever became of him? Is there anything else about him in the Bible or in Jewish text? Was he the only example of someone in the Bible who was rarely if ever mentioned again? Did he become a believer afterwards?

I think per the link Simon was symbolic of those Hellenistic Jews that heard the Gospel and took up the cross. The Hellenists were intellectuals (the Greeks) so this may have been foreshadowing Paul preaching to the Greeks.
