What is this passage all about in Luke 5?

ISA) Luke 5:37
"And no one is casting young<3501> wine<3631> into Old<3820> skins<779>, if yet no surely shall be ruined the young wine, of the skins,
and it shall be being poured-out and its skin shall be perishing.
38 but young wine into New<2537> skins is to be cast,
and both are preserved-together<4933>.

2537. kainos of uncertain affinity;
new (especially in freshness; while 3501 is properly so with respect to age:--new.
3501. neos including the comparative neoteros neh-o'-ter-os; a primary word;
"new", i.e. (of persons) youthful, or (of things) fresh; figuratively, regenerate:--new, young.

In the practical sense, this illustrations would have been clearly understood by the people. The reality is that if a patch of new cloth were to be attached/sewn on an old garment, the new material will shrink and rip if the garment is washed. Or, if new wine was stored in an old skin bottle that has lost its elasticity, the skin will burst when the new wine ferments and gives off carbon dioxide.

By this illustration, Jesus was illustrating the effects of bringing in an entirely new system of things: and, that this new system of things was not to be attached to the current system of religious standards, procedures, teachings, conditions, traditions, ceremonies, practices and so forth: Furthermore, his disciples should not be associated with these current religious groups.

Jesus did not come to patch up and prolong an old worn-out systems of worship that were ready for discarding. He was establishing something entirely new, and would not try to use the “new” merely as a patch to bolster any failing religious systems that were going to be discarded.

Thus, the new Christian organization that Jesus was forming was not to be as a new patch on an old garment or as new wine in an old wineskin. These old systems were not adequate, could not contain nor exist alongside the new system of things.

Another good guess. It could be more personal. Like old skins having once kept our ways before entering salvation.
And trying to mix our new belief with our old ways.

If you take it literally, grape juice emits carbon dioxide bubbles as the yeast ferments it. The new skins are pliable and stretch as the wine expands. If they leave the skin bottle ends open, bacteria gets in and spoils the wine, thus they must tie or sew the ends shut.

If you try to reuse old lamb skin bags that have hardened, they might not contain the grape juice as it ferments and bubbles without splitting.

Let's just hear the whole situation and context (which is of course all the gospel ultimately, but even just the passage can help some for that context) --

33They said to him, “John’s disciples often fast and pray, and so do the disciples of the Pharisees, but yours go on eating and drinking.”

34Jesus answered, “Can you make the friends of the bridegroom fast while he is with them? 35But the time will come when the bridegroom will be taken from them; in those days they will fast.”

36He told them this parable: “No one tears a piece out of a new garment to patch an old one. Otherwise, they will have torn the new garment, and the patch from the new will not match the old. 37 And no one pours new wine into old wineskins. Otherwise, the new wine will burst the skins; the wine will run out and the wineskins will be ruined.38 No, new wine must be poured into new wineskins. 39 And no one after drinking old wine wants the new, for they say, ‘The old is better.’ ”

The situation isn't just a back-to-basics reform or a commitment to do better in the existing Old Covenant.

A profoundly New thing is happening, the New Covenant! It's not at all to only modify some the Old Covenant, but profound change --

New International Version
"I will give you a new heart and put a new spirit in you; I will remove from you your heart of stone and give you a heart of flesh."

I think it is about that young person can receive more easily new things, because old ideas don’t restrict him. Old person tries to hold old ideas, even if they are wrong, because that is what he has always done. I think it is about how difficult it is to receive new ideas, if one has already firm beliefs and ideas.

I don't have a problem with multiple interpretations as long as they are true and the context allows them. Mark's interpretation is not that off either, though he seems to equate the container with the contents. I particularly liked his explanation on the fermentation process. Indeed, if we are flexible and not fixated on our own opinions, like children, not set on our old ways, we can accommodate the (expansive) truth of the Gospel. On the other hand, if we are like the Jews, prideful and envious, we will burst into anger when someone comes along and offers us a better teaching.

Your interpretation is good too, though it applies more to the patched garment than the wine. Our ways or actions are external to us, just like a garment, whereas the driving reasons or logos - to use the Greek work - for doing them is the wine, something we consume and internalize. And yes the next step is to equate the wine with Christ's blood and the garment with His body, or with His Truth and Righteousness alternatively.

This is far from being an exhaustive list of possible interpretations. Ultimately, the words of God are as infinite in meaning as His essence.
