That sounds nice, and convenient! :D I've heard of whiting, but not "Southern Blue" - I wonder if it's exclusive to the southern hemisphere js. :scratch: :)

Yes, it is, Sue. :) I remember looking it up when I first came across it in the supermarket and it's found in the southern oceans around NZ. Wikipedia tells me that "New Zealand southern blue whiting were the first blue whiting fisheries in the world to gain Marine Stewardship Council certification, the ‘gold standard’ for sustainable fisheries performance."

Yes, we do have a fairly substantial fishing industry here, Sue. Most of the commercial catches are sent overseas these days, but there is still a bit for NZ shops too. Or you can go and catch your own. ;)

A fisherman's paradise I would think, with so much coast, and presumably a wide access to the seas around NZ. :) We're a bit limited due to neighbouring countries, however the industry is an important one here too. We have fresh-water fish also and Scotland is famous for its salmon. One of my favourite meals is a salmon steak with chilli flakes, ready bought from the supermarket, and I just add it to stir-fry veg. I like spicy food, but not too hot :eek:, so sometimes remove a few of the flakes.:D

I really like trout too! - Try it! :D

We have tinned salmon here too, and I've used it in salads or sandwiches. I like it, but the fresh salmon is better; pricier, so not an everyday meal, but one to enjoy now and then. :) I use tinned tuna quite frequently and mix it with low-fat mayonnaise and sweetcorn, or a little curry powder and sultanas, and usually serve it on toast with some salad leaves and tomatoes.

If you get the fresh salmon, smoke it. To me it is the best way to eat salmon. Although, salmon is good any way you fix it.

Moving on from fish, I made a lovely banana bread this week. It went down very well when I took some to knit and natter :)
That sounds delicious. :) Did you use yeast? I still haven't mastered the art of yeast baking yet, although I know I started a thread about baking our own bread years ago!:D

Does anyone bake cakes, and if so do you have a recipe for a fairly low fat fruit cake? :) An ex-colleague used to make a delicious pineapple cake, and I think pineapple would reduce the need for some of the fat. Banana might work too. I also want to make it low sugar, but I think I can do that by simply reducing the amount I put in, as well as the natural sweetness of the fruit helping to make the cake palatable. Just wondering if anyone had any ideas. I don't mind some fat and sugar, but not as much as most recipes recommend. :)

Use 'HALF-SPOON' sugar (if you don't mind the chemicals)
As a sweetener, that is LOW on sugar... as you mentioned: fruit will also, sweeten the cake
It supports my bread pudding very-well indeed



The problem, with white granulated sugar, is, that it has been 'over-processed'
It is the refining, that ramps up the 'bad-side' of sugar
ADD also, the anti-clagging chemicals that they add to the sugar
and we wonder, why our bodies are not thriving

I use UNREFINED CANE SUGAR _'Billingtons' available, at Asda and Tesco

It is now certain, that all Tuna being caught during this past year
are contaminated by radioactivity from the Fukishima nuclear power plant disaster

Tuna, is OFF of my shopping list........

Yes, I used oil in muffins once, and they were okay. I usually use vegetable oil, sometimes with a little butter to add flavour, but I wish I knew the recipe for the pineapple cake. I also think apples, carrots or bananas would help to keep it moist. I use apples and slightly reduce fat in my Christmas pudding and just cut down the sugar.

Recently I made bara brith, which is a bread, but I used it more like a cake. Fruit is soaked in tea, which adds moisture to it. :)
