I just boil chicken leg quarters in a HUGE pot filled with water and 2 cans of chicken broth, add some spices like garlic and onion powder, italian seasonings for about an hour and a half on medium heat, then I remove all the bones. Then I take canned biscuits and tear them into small pieces and throw them in the pot and let them puff up and cook, usually takes maybe 20 minutes or so.

I make mine the same as WildHeart...Only I don't use spices....only salt and lots of pepper...You can also make your own dumplings...use a bisquit recipe and roll them out then cut them in strips....nothing better on a cold winter day.....

I use canned chicken broth and the frozen breast tenders (I don't like chicken on the bone or dark meat). Boil until the chicken is done and then I tear it apart with a fork. The, I use canned bisquits, too. Just tear them into small pieces and wait until they're all puffed up (about 10 minutes??). DON'T STIR THE DUMPLINGS!! LOL, just let them sit there on top...if you stir them, they'll dissolve.

Really easy to do.

I like to stew both drumsticks and breasts with a couple halved stalks of celery, sliced onion, parsley, bay leaf, salt and pepper. When tender. I remove the chicken pieces to cool, and use a slotted spoon to remove the pieces of celery, onions, and bay leaf. Keep broth simmering gently. Remove chicken from bones and cut in chunks, adding back to pot. I mix up bisquick dumplings and spoon them into broth and cook according to directions. Makes light, fluffy dumplings.

Or if you prefer the "chewy" dumplings, you can't get it any easier than cheating with store bought "spaetzel"[tiny, doughy dumplings] that come on a plastic-wrapped tray, usually found in the meat dept. These are also great to use for Chicken Paprikas.

Super Easy Dumplings For Chicken!

Make your regular recipe, but when it comes time to make the dumplins try using thin flour tortillas sliced into bite size strips, and be sure to add them a few at a time to keep them from lumping together.
The results are perfect - not too thick - dumplins are just right!

Now here is a regular recipe for chicken and dumplings, from "scratch".

Chicken and Dumplings

  • 1 2-1/2 to 3 lb. Chicken
  • 4 C Water
  • 2 C Chicken broth
  • 1 Carrot, roughly chopped
  • 1 Medium onion, cut into quarters
  • 1 Stalk of celery, roughly chopped
  • 1/2 t Salt
  • 1 C Milk
  • 1/4 t Freshly ground pepper
  • 2 C All-purpose flour
  • 1/2 t Baking soda
  • 1/2 t Salt
  • 3 T Shortening
  • 3/4 C Buttermilk

Place the chicken in a Dutch oven, and add the water, broth, carrot, onion, celery and salt. Bring to a boil, cover and lower heat. Simmer for 60 to 70 minutes, or until tender and chicken is done. Remove chicken and allow it to cool enough to handle. Remove the carrot, onion and celery pieces from the broth and discard. Reserve the broth.

Bone the chicken, discarding all skin and bones, and cut meat into bite-size pieces. Set aside.
    The Dumplings:

Combine the flour, baking soda and 1/2 teaspoon salt; cut in the shortening with a pastry blender or two knives until mixture is consistency of coarse meal. Add the buttermilk, stirring just until dry ingredients are moistened. Turn dough out onto a floured surface and knead 4 or 5 times -- no more.

For drop dumplings, pat the dough down to a 1/4-inch thickness, and pinch off 1-1/2-inch pieces. For rolled dumplings, roll the dough to a 1/4-inch thickness, and cut into 3" x 1" strips.

Bring the chicken broth to a boil, and stir in the milk and pepper. Correct seasonings, if desired. Drop dumplings, one or two at a time, into the boiling broth and reduce heat to medium-low. Stir

I love chicken and dumplings too. I found at Walmart that they sell pre-made dumplings in the frozen section. Just drop them in and your done! Not too expensive either. Our family just drops a whole chicken in tons of water. Boil the heck out of it till it falls apart. Debone it, throw back into the seasoned water (salt, peppa, italian seasoning....maybe some onion and garlic powder). Then add the frozen dumplings. Yummy!! It's crossed my mind to use Bisquick too. But I haven't tried that yet. Maybe tonight! Lord bless your socks off!

OK, here's the easiest recipe.

Take 1 can of cream of chicken soup (add 1 can of water). Bring that to a boil and get a can of biscuits. Flatten each individual biscuit in your hands and pinch off little pieces of it and put it in the soup. Let them cook until they aren't gooey.
