Languistino salad Po' Boy
Two Sandwiches

8 oz langostino tails
2 tablespoons butter
1 teaspoon olive oil
1 tablespoon cream cheese
1 tablespoon mayonnaise
2 tablespoons finely sliced celery
2 6-8 in. hoagie rolls
Lemon pepper to taste

Melt butter with oil in frying pan on medium heat.

Slice rolls lengthwise, across top of roll, about 2/3 through.

Spread rolls to open, and brush lightly with a little of the melted butter/oil.

Put opened and buttered rolls in broiler, just long enough to very lightly brown the bread and make the surface crunchy.

Remove from broiler.

Saute langostino tails in pan, until almost done.

Add celery and stir-fry for two minutes.

Add Lemon pepper mixture to taste.

Add cream cheese and mayonnaise.

Stir until mixture coats the langostino.

Fill hoagie rolls and serve warm.

That's basically a New England lobster roll but I don't know anyone who uses cream cheese in their mix.

Yeah. Langostino tastes very much like lobster, but it's cheaper. I was attempting to get a really smooth, dense sauce that would cling to the bits, sort of the way Chinese stir fry works. I used very mild seasoning, to let the flavor of the tails come through. Trust me, this is really good.
