For "Christian meditation" I'd recommend The Art of Prayer: An Orthodox Anthology

Basically anything by Saint Theophan the Recluse will give you a lot of insight into this subject

I say this as a Roman Catholic: that was back when we were an undivided Church. If one decides to study Maximus's life, you'll see. Nonetheless, Maximus is a Father of the Church as recognized by both the EO and the RCC, per Pope Benedict XVI.
