Found this recipe for a favourite of my grandchild’s!

INGREDIENTS

  • 1 ¼ cups granulated sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • ⅛ teaspoon fine sea salt
  • 6 large egg yolks
  • ¼ teaspoon flaky sea salt (such as Maldon)

PREPARATION

  1. In a medium pot over medium heat, melt 3/4 cup sugar with 3 tablespoons water, swirling skillet frequently, until sugar turns mahogany brown in color (it should be almost but not quite black).
  2. Add heavy cream, milk, remaining 1/2 cup sugar and the salt; simmer mixture until caramel melts and cream mixture is completely smooth. Remove pot from heat. In a separate bowl, whisk yolks. Whisking constantly, slowly whisk about a third of the hot cream into the yolks, then whisk the yolk mixture back into the pot with the cream.
  3. Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170 degrees on an instant-read thermometer).
  4. Strain through a fine-mesh sieve into a bowl. Cool mixture to room temperature. Cover and chill at least 4 hours or overnight.
  5. Churn in an ice cream machine according to manufacturer’s instructions. Sprinkle flaky sea salt into base during the last 2 minutes of churning. Serve directly from the machine for soft serve, or store in freezer until needed.

Thanks, I’m not sure where it’s from. But it’s a great room with a view where ever it may be!
I just went shopping for some ingredients and ended up buying mostly deli items. I’ll make Greek potatoes and rice as well as some roast vegetables for fillers for the week. That should tide me over for awhile. I like to find more than ingredients when looking for something to eat too.

Have a great day!

That sounds good! I'll share this hard-to-find recipe with you:

Pistachio Rice Salad

1 1/4 cups long grain rice
1/2 cup shelled pistachio nuts, or 1 cup unshelled nuts
1/2 cup currants, or raisins

For vinaigrette dressing:
6 tablespoons oil
2 tables vinegar
1/4 teaspoon ground cinnamon
Salt and pepper

Cook rice in plenty of boiling salted water for 10-12 minutes or until just tender, drain and rinse it thoroughly with hot water. Drain again, then turn onto a large flat platter and leave to dry.

Make vinaigrette dressing by whisking all the ingredients with salt and pepper to taste, until combined. Mix rice, pistachios, and currants and moisten with the dressing, adding more salt and pepper if needed.

(To shell pistachios, insert the pointed end of a half shell into the open end of a nut; twist half shell.)
