I'm searching for a specific recipe he did a long time ago on one of his shows, and that appears nowhere in any of the Food Network indexes (or anywhere else I've been able to find).
It was a stew that he described as being from Northern Italy, where the cuisine is influenced by that of Austria and Switzerland. My recollection was that it had pork shoulder, onion and garlic, root vegetables, tomatoes, maybe some dried fruit (raisins or prunes??) and I KNOW it had some nutmeg. Maybe a bit of cinnamon? Probably deglazed the pan with wine...
Anyway, it was absolutely delicious and I want to make it for some friends, but as I said I can't find the recipe anywhere. Does anyone know of it?
