Banana Bread Recipe for one leftover banana

Blog details

The recipe for one-banana banana bread is a quick and easy way to make banana bread with just one ripe banana. This uses common ingredients that most people already have in their pantry, and it bakes up soft and sweet with a decadent cinnamon sugar crust. Here are the ingredients and instructions. The units are in imperial, but can be converted to metric using an online calculator if need be.

Ingredients:
  • 1 ripe banana
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons olive oil
  • ½ cup + 1 tablespoon all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup walnuts (chopped, optional)
Instructions:
  1. Preheat the oven to 350°F (175°C).
  2. In a medium-size mixing bowl, mash the banana. Then stir in the egg, vanilla extract, and olive oil.
  3. Add the all-purpose flour, granulated sugar, brown sugar, baking soda, and salt to the bowl. Stir until just combined.
  4. Fold in the chopped walnuts.
  5. Pour the batter into a greased 8x4 inch loaf pan.
  6. Bake for 35-40 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  7. Let the bread cool in the pan for 10 minutes before removing it and slicing it.
This recipe is perfect for those who only have one ripe banana and want to make a small batch of banana bread. It's also a great way to use up a brown banana that might otherwise go to waste.
