Now that I am more awake since 2am... and can apply what I've learned from double majoring in what it sounds like you'd be doing! (I am a double major Counseling Psychology and Commercial Music going into my senior year)
I did a little more research and thinking about programs that might have what you want.
First... in regards to PCC, it tends very much toward the "Against" model of integration of Psychology and Christianity as shown by the following quote from the relevant Wikipedia article: "PCC has also taken a firm stand against secular teachings of Psychology that are based upon Freudian (http://en.wikipedia.org/wiki/Pensacola_Christian_College) principles." -- this means, then, that they avoid applying anything the science of psychology has actually learned over the past several hundred years. Many of the therapies I have learned to use have a direct application to serving my brothers and sisters in Christ, so while biblical teachings are key in biblical counseling, that is no reason to throw out the baby with the bath water!
If you want to do Christian counseling, I would strongly suggest getting a hold of the journal Psychology and Christianity.
Also, as has been mentioned, Wheaton would be a great school. They have a very strong undergraduate program and their graduate psychology program focuses on serving underserved populations.
If you're willing to go further, Biola has a great program, but it sounds like you want to stay in the area, so that may not be a good option.
Both schools also have excellent music conservatories attached, so your minor would be taught by excellent professionals in the field.
