Egg Recipes?

As explained--fritattas are slow cooked-usually in the oven. I start mine on the stove and then put the whole cast iron skillet in the oven...I cook the veggies to my liking first and then add about 8 or so eggs--cook for a minute or two and put the skillet into a preheated oven for about 20-30 minutes, til the eggs are set and don't jiggle.

Okay, if my pans aren't cast iron, should I just transfer the mixture to a baking dish?

As long as your fry pan can withstand up to 500 degrees, it will be fine in the oven.

or "Eggs and whatever Chorizo is" in Mexican is delicious. I had it for lunch today. It's served in a tortilla shell with rice and refried beans on the side.

Just buy some Egg McMuffins in the moring and throw them in the microwave for dinner.

I wouldn't put a pan in the oven that has a plastic handle. I'd transfer it to a pre-heated, cooking sprayed pie pan or round cake pan...otherwords- put spray the pan and put in in the oven when you pre-heat to, say 350.
