Reps: 33,340,060,490,694,832 (power: 33,340,060,490,704) | | | I make guacamole by mashing a ripe avocado with a fork, add a little kosher salt and fresh ground black pepper, fresh chopped cilantro, a little cumin and fresh ground chile powder I make myself, and lime juice.
Sometimes I'll add a small diced tomato, and a diced serrano or jalapeno chile. |

Stick 2 or 3 toothpicks into the avo pit, kind of mid-way up with the pointy end up. Balance the toothpicks on the neck of a jar (jam jar is fine) of water with the bottom (flattish side) of the avo pitt sitting in water. The brown papery covering on the pit will crack and flake away as it begins to germinate, and the root will grow down into the jar. It can take several weeks for the pit to germinate, but once the root starts it grows pretty quickly after that. The pit needs to be planted into soil once the root is about 1 / 1 1/2 inches long. (I have sometimes kept them growing in a jar until they grew little stem and a couple of leaves.) I usually just set the jars along my kitchen window sill so I can keep an eye on them and keep the water topped up. Whether or not the pit germinates depends a lot on whether the fruit was picked ripe or whether it was picked immature and kept in cold storage for a lengthy period. |

I don't mash my avocadoes. I prefer a chunky guacamole/salsa.
Avocadoes
tomatoes
garlic
onion salt
chop and stir. done!
How about tomatillo guacamole?
8 ounces tomatillos, husked and rinsed (about 5 or 6)
2 or 3 fresh serrano chiles
1 garlic clove, unpeeled
1/2 small white onion
1/4 cup chopped cilantro
4 avocadoes
salt
Lay tomatillos on baking sheet and broil. When they blister (5 mins), turn them over. cool.
Roast the chiles and garlic over medium heat in heavy skillet. 5-10 minutes for chiles, 15 minutes for garlic. cool, then pull the stems from chiles and peel garlic.
Combine tomatillos, chiles and garlic in food processor. Blend to coarse puree. Transfer to medium size bowl.
Add the avocadoes and everything else. Keeps for five days, if covered tightly with plastic wrap. |

2 avocados, peeled
1 small onion, finely chopped (approx. 2 tablespoons)
1 clove garlic, minced
1 medium ripe tomato, chopped
juice from one lime
salt and pepper to taste
Mash avacados in a medium bowl. Stir in onion, garlic, tomato and half of the lime juice. Season to taste with salt, pepper and remaining lime juice. Refrigerate at least 1/2 hour before serving.
I made this last night and I give it 3 thumbs up. Very good, 
PS. being a garlic lover I added 3 clove garlic.
