Does anyone have any good candy recipes that would be good for someone who is diabetic? I am making all my Christmas gifts this year, and I wanted to make some really good candy for my father-in-law, and he is diabetic. Any help would be appreciated!

sarahbug, I was hoping you'd get some replies; hubby has diabetes so I'm seeking diabetic recipes too.
When you say candy recipes, do you mean hard candies or simply sweets? I've found some recipes for sweets - even fudge! - but I'm not sure if that sort of thing is what you're looking for?

Tidbit: Apparently, cinnamon (about a gram or two a day) iis very very good for diabetics, according to recent research. Appears to help insulin work. Cinnamon candy, thus, might be a good bet.

lol I am the same way! I have tons of cookbooks, and I love the allrecipes website (that's where I got this recipe). I haven't tried it yet, so I'm not sure how it turns out. Okay, here it is:
Directions
1. Preheat oven to 350 degrees F.
2. Sift dry ingredients, set aside. Beat margarine, sugar, egg, and vanilla. Add the flour mixture.
3. Refrigerate dough for one hour.
4. Powder hands lightly with flour and make balls about the size of a small egg, by using 1 tablespoon dough. Mix cinnamon and nuts together and roll balls in the spice mixture. Place on greased cookie sheet, 2 inches apart. Bake 12 to 15 minutes. Remove from pan soon as they come from the oven.

Mmmm, those sound good! I'll have to get some ingredients the next time I go shopping so I can make them for hubby.
Here's one I found:
Sugar Free Chocolate Fudge
2 8 ounces pkgs. cream cheese, softened 2 1 ounce squares unsweetened chocolate, melted and cooled Sugar substitute equivalent to 1 cup of sugar 1 t. vanilla extract 1/2 c. chopped pecans
beat the cream cheese, chocolate,vanilla and sugar substitute until smooth. Stir in pecans. Pour into 8 inch square baking pan lined with foil. Cover and refrigerate overnight. Cut into 16 squares. Makes 16 servings, 5 grams carbs 147 calories
It says 18 packets of Equal is the equivalent 1 cup of sugar. I'm not sure I'd put the nuts in 'cause I like my fudge smooth.

Here's another one I found that sounds really tasty.
Mocha Crinkles
1 1/3 cup packed light brown sugar 1/3 cup vegetable oil 1/4 cup reduced fat sour cream 1 egg 1 teaspoon vanilla 1 3/4 cup all-purpose flour 3/4 cup unsweetened cocoa powder 2 teaspoons instant expresso or coffee granules 1 teaspoon baking soda 1/4 teaspoon salt 1/8 teaspoon black pepper 1/2 cup powdered sugar
Combine brown sugar and oil in medium bowl. With an electric mixer, beat at medium speed until well blended. Beat in sour cream, egg and vanilla. Mix flour, cocoa, coffee granules, baking soda, salt and pepper in another medium bowl. Beat the flour mixture into the brown sugar mixture until a soft dough forms. Form into a ball; cover and refrigerate until firm, 3-4 hours.
Preheat oven to 350 F. Place powdered sugar in a shallow bowl. Cut dough into 1 inch pieces; roll into balls. Roll in powdered sugar. Place on ungreased cookie sheets. Bake for 10-12 minutes or until the tops of the cookies are firm to the touch. Do not overbake! Cool completely on wire racks. Makes 6 dozen cookies.
