Idolatry would show complete disrespect to G-d and encourages others to do the same, something we are to avoid. Adultery shows complete disrespect to your spouse, something else to avoid. Wouldn't it be easier to stop the crazy lady from killing your wife? That said, there are probably 20 different explanations as to why those four.
So when people say that Jesus broke the OT law to heal a man, they're wrong - he was keeping in line with the law by saving the man in spite of the Sabbath. Right?
If the injury was life threatening, then yes, he broke no law. If it was a hangnail... yeah, that should have waited until sundown. The Jews of the time would have known this, since it was already an established part of Jewish law. You can see this played out in our Bible when David had to eat the bread reserved for priests to survive. He broke no law because he may have died of starvation otherwise.
